SPIRIT AMARI
Malcolm Lamont DipWSET is one of IWEG`s instructors for WSET Level 2 Award in Spirits.  With the thanksgiving meal this weekend, Malcolm shared his ideal uses for spirit amari, also known as alcoholic digestifs:

Spirit amari are, like gin, spirits that have been flavoured with botanicals, ingredients such as cardamom, peppermint, caraway, cinnamon, hops, ginger, and saffron which often make up part of a “secret recipe”. Along with the bittering component from sources such as quinine, gentian, or wormwood which stimulates salivary glands and digestive enzymes, these tonics have carminative properties (makes you feel good), even if a burp will catch you off-guard!

Historically, spirit amari is derived from aromatized wines, which date back to pre-classical times, and with their restorative powers have been used to combat illness and disease. They were even consumed legally during US Prohibition, being considered “medicinal”! Today, amari are consumed as aperitifs before a meal such as with Campari, or as digestifs in concentrated form. A related product, cocktail bitters are used in mixology.

Examples of digestif spirit amari include Italy’s Fernet Branca, whose popularity has earned it the nickname “bartender’s handshake”. Chartreuse is France’s most notable elixir, and Germany’s Jägermeister, and Hungary’s Zwack Unicum are among the more well-known bittered spirits. Widely available are Underberg digestifs, whose bottle recommends, “after a good meal”, which to me, this time of year, that’s what it’s all about!

WINES OF PORTUGAL ACADEMY INITIATION LEVEL 1
Portugal has a wealth of local grape varieties, which produce wines in a range of styles. The multitude of wine-growing regions has been undergoing a series of changes over the past decades, and there has been an overall increase in the quality of the wines produced. Vineyard restructuring and new wineries fully equipped with the most modern equipment: destemmers and crushers, cooling systems, different types of cap management (including robotic lagares) have launched Portugal and its winemakers into the twenty-first century with the potential for world recognition.

ViniPortugal brings the Wines of Portugal Academy Certified Training Program to IWEG. Students successful in the course will receive a professional accreditation from the Wines of Portugal Academy. Explore the history, taste a variety of wine styles, and further your knowledge of the native grape varietals of this great winemaking region! This one-day course is ideal for trade professionals seeking professional accreditation and Portuguese wine enthusiasts.

The course will be taught  byWines of Portugal Academyauthorized educator Nancy Reynolds DipWSET. In May, Nancy was invited to participate in the judging of Portuguese wine at the 2018 Wines of Portugal Challenge. We invited her to  briefly share her experience on the trip:

We were headquartered in Lisbon, where coincidentally the final of the Eurovision Song Contest was being held. For three days we met in Santarém to judge wines in a five or six person group. Afternoons were spent in masterclasses put on by the Wines of Portugal. Evenings were spent enjoying the cuisine and sites of Lisbon. At the end of the week, while we visited wineries in Lisboa and Palmela, the top wines were judged by the master panel, include John Szabo MS. The event finished off with a gala where we presented awards to the winning winemakers.

WSET LEVEL 3 AWARD IN SAKE
In celebration of World Sake on October 1st, sign up for WSET Level 3 Award in Sake until October 5th at an exclusive rate of $950 (regular rate $1,200).

WSET Level 3 Award in Sake provides students with an in-depth understanding of the production methods that affect sake style, quality and price. It develops systematic tasting and description skills, as well as the ability to make recommendations. 

This course combines classroom and online study and a tour of the Ontario Spring Water Sake Company.

You will: 
  • Explore in detail the techniques employed in sake production
  • Understand how these techniques affect sake style and quality
  • Visit a local sake producer for a behind-the-scenes tour and tasting
  • Experience an extensive range of principal and specialty types of sake, evaluating quality, identity and price, using the WSET Level 3 Systematic Approach to Tasting Sake® (SAT)
  • Appreciate the historic and current cultural and commercial significance of sake in Japan and in export markets
  • Assess and describe sake with confidence, and be able to make selection, storage and service suggestion
Upon successful completion of a tasting test and a theory test, consisting of multiple-choice and short-written answers, you will receive a WSET certificate and lapel pin and will be able to use the associated WSET certified logo.  

The course curriculum is instructed by Michael Tremblay, IWEG's WSET Certified Sake Instructor and Ontario's first Advanced Sake Professional. Michael is the Head Judge for the Toronto International Sake Challenge and has had the opportunity of judging at the International Wine Challenge in Japan and London. He is currently the Head National Sake Sommelier for Ki Modern Japanese + Bar, where he manages the largest sake list in Canada. Michael was recently awarded the prestigious title of Sake Samurai by the Japan Sake Brewers Association for spreading the word about Japanese sake around the world with pride and passion.

AUSTRIAN WINE IS PLATINUM SPONSOR OF THE 2019 SOMMELIER WORLD CHAMPIONSHIP
From March 11-15, 2019, the prestigious world championship of the Association de la Sommellerie Internationale (A.S.I.) will be held in Antwerp, where Austrian wines will be leading the way.

Austrian wine in focus with international top sommeliers
The Austrian Wine Marketing Board (AWMB) will be featured along with Inter-Rhône as a platinum sponsor at the 2019 Sommelier world championship in Antwerp. Thus Austrian wines from all of the winegrowing regions will be presented throughout the tournament – at every lunch and every dinner and at the conclusion of every day in the ‘bar des sommeliers’, as well as in two master classes for the sommeliers and for members of the trade. For five days, Austrian wines will be able to shine for the world’s finest sommeliers and before the avid eyes of international wine journalists – which is sure to heighten interest in the small wine-land and its great wines.

Return to Belgium after fifty years
In 1969, the newly founded A.S.I. conducted the first Concours de Meilleur Sommelier du Monde in Brussels. Now, fifty years later the world championship returns to Belgium, where it will confer the title ‘A.S.I. Best Sommelier of the World’.

Great media interest in the title match
There will be sixty-five top-drawer international sommeliers competing for the title, including Austria’s best sommelier, who will be named on 5 November. Tests of knowledge and blind tastings are part of the championship, as are examinations in facets of wine service and awareness of the international wine market. The final three candidates must prove their capabilities on 15 March in front of some 2,000 attendees. The anticipated media interest in the sommelier world championship is enormous: more than 150 international journalists will attend the championship – and in addition, the last round will be streamed live via the Internet.

ROGERS & COMPANY PORTFOLIO TASTING: CALL FOR VOLUNTEERS
Rogers & Company (Château, Villa & Estate Wines) is hosting its annual portfolio show on Monday, October 15th and they are looking for volunteers to help make this event a success yet again. This is your chance to encounter and taste great wines from some of the world’s most legendary wineries such as Dominus, Shafer, Olivier LeFlaive and Chateau Montelena.

They will also have a few winemakers participate, amongst whom will be our guest of honour from an iconic Tuscan winery to share her story!
