The word terroir contains the French root terre, meaning “land” or “earth.” Within  the context of food and drink, terroir often refers to flavours that are influenced by and that  reflect  elements of the  land  from  which  they come. Beyond enjoying  terroir traditionally through food and wine, we find ourselves experiencing and using it in spirits  and cocktails, in order to give them a distinctive and localized taste.

There are many  manufacturers, old and  new, that  take advantage  of homegrown, regionally specific ingredients and flavours in Canada, capturing the spirits  and essence of the areas where they are produced. Gin is a prime example  of a spirit  that  can clearly illustrate Canadian terroir.

Join us with Peter Dillon of Dillon's Small Batch Distillers and Victoria Walsh and Scott McCallum, authors of A Field Guide to Canadian Cocktails, as we appreciate this revival and renaissance of one of our favourite spirits.
