WSET Level 3 Award in Sake
The only course that will teach you how to taste sake like a pro!

IWEG is pleased to offer the Wine and Spirit Education Trust Level 3 Award in Sake! The course aims to provide students with a comprehensive understanding of the world of sake and explore the rich history of Japan’s national beverage.  

This course combines classroom and online study and a tour of the Ontario Spring Water Sake Company.

The course will cover: 
  • Overview of grades and styles 
  • Reading sake labels (including learning some of the most important kanji you will find on a bottle) 
  • In depth instruction of the steps of sake production 
  • Exploration of the key regions of sake production 
  • Proper storage, selection and service of sake 
  • Sake tasting using WSET’s Systematic Approach to Tasting (SAT) designed specifically for this course 
  • Taste between 50 to 60 sakes
  • Tastings will include samples found at the LCBO and an array of sake not readily available outside of Canada 
  • Sake Tasting includes weekly palate calibration to hone proper tasting techniques 
Exam: two parts consisting of a theory and tasting exam.  
Successful students will receive a WSET certificate and pin.

A variety of workshops will provide the opportunity to continually develop the knowledge, service, and management skills required by Canadian sommeliers. 

Nov 11th: Aroma Seminar 2 - HUGE HIT!
While smell is often associated with memory and emotion, psychology and popular neuroscience won’t teach you to discriminate honeysuckle from hay, much less how to get them in front of your nose. Like wine, any given aroma source is shaped by complex environmental, temporal, material and sociocultural forces that contribute to valued (or unwanted) sensory properties, characteristics and qualities that can help you tell them apart.

Drawing on varied perspectives, methods and cultural practices of smell and aroma, this ‘materials-centric' workshop takes an experiential, 'multimodal' and hands-on approach to document, represent and communicate aroma as a form of learning inquiry beyond the ‘gridlocked’ rote memorization of descriptors. In addition to a tasting component, this workshop will introduce you to a variety of fine, uncommon and rare aroma resources, concluding with a ‘how to’ create your own 'DIY aroma library.'

Dr. Melanie McBride is a postdoctoral researcher in the Faculty of Education at York University and founder of the ‘Aroma Inquiry Lab’ at Ryerson University’s Responsive Ecologies lab. Melanie's research investigates the ‘hidden curricula’ of aroma culture with a focus on learning inquiry and DIY making practices with aroma materials. She has undertaken site-specific research of aroma-rich sites in Canada and France to explore the use of raw, living and processed aroma materials in various learning contexts. Her research contributes to providing more ‘ecologically’ situated and creative approaches to learning, communicating and making with aroma 'from the nose down.' WINES OF PORTUGAL ACADEMY INITIATION LEVEL 1
Portugal has a wealth of local grape varieties, which produce wines in a range of styles. ONTARIO'S BRAVE NEW WINES
Ontario's Brave New Winescourse is now into its fourth successful year and IWEG continues to develop and broaden the learning experience for students and connoisseurs of Ontario wines.  

In response to student demand this is now a certified program in collaboration with the Wine Council of Ontario and candidates successful in passing the final exam will hold a recognized Certificate as an Ontario Wine Specialist.

For the 2018 program, we are excited and proud to bring back wine educator Dave Larocque. Dave has lived his love for wine for over 30 years, initially as a product consultant with the LCBO, then subsequently working at many Ontario wineries, and as a wine educator and trainer for Canadian winery staff, Niagara College, the Wine Council of Ontario, and staff of numerous restaurants.  He recently authored a book titled ‘The Wine Appellations of Ontario’.  His newest venture, Wine Culture, brings the enjoyment of wine to groups across Canada through presentations and tastings in an educational and entertaining approach.

Students will attend four full days of study with each morning focusing on the wine appellations of Ontario and basic wine education, while the afternoons will present insightful tasting opportunities with a number of local winemakers, each addressing unique aspects of their winemaking style that builds on the morning studies. The final day will bring the classroom work to life with a field trip to three leading Niagara wineries. 

In collaboration with the Wine Council of Ontario, these 4 sessions of learning and tasting celebrate local wines, growers and producers and give insight into the bold venture that is winemaking in Ontario. 

Come and meet some of Ontario’s leading edge wine makers, enjoy their award-winning wines and learn more about how the trail-blazing Ontario wine industry is preparing for the future.

Day 1: 
An introduction to the Lake Erie North Shore, Niagara Peninsula, Prince Edward County appellations and their sub-appellations, and the importance of location, topography, weather, climate and soil within each appellation. 

Day 2: 
Which wine should I choose? Discover the four fundamental classifications of wine styles; table, sparkling, dessert and fortified. Learn about the major grape varieties of Ontario and their common characteristics. 

Day 3: 
Learn about the basic components of wine. Explore and discover wine and food matching principles through an interactive wine and food component tasting. 

Day 4: 
Tour three wineries in Niagara; taste VQA wines; tour wine cellars, barrel rooms, vineyards, and sparkling wine cellars. Write the final ‘The Wine Appellations of Ontario’ test to become Ontario Wine Certified.

IMPORTING WINE, BEER, & SPIRITS FOR PLEASURE AND PROFIT
 
More than any other consumer product, the alcoholic beverage industry has the ability to weather periods of slow or negative economic growth. Statistics Canada recently reported that net income among the provincial liquor authorities in 2014 rose 3.6% to $6.2 billion. More than half this amount is from the sale of imported wine, beer & spirits.

In Ontario, the LCBO reported imported beverage alcohol sales of $2.8 billion during their most recent fiscal year, a 4% increase over the previous fiscal.

WSET LEVEL 1 AWARD IN WINES + so much more
Our unique WSET Level 1 Award in Wines is a perfect starting point for structured wine studies for the wine enthusiast. Students will complete the requirements of the WSET Level 1 Award in Wines and also discover the key elements of food and wine taste interactions such as sweetness, acidity and saltiness in food.

Students will have the opportunity to experience key pairing principles through 5 gourmet tastings and discuss pairing wines with dishes from non-European cuisines, as well as menu design. 

Students will meet WSET Level 1 learning objectives and leave with practical knowledge to put to use when selecting or recommending wines for diverse dining occasions.

The course will be led by Karen LaVigne and Carrie Rau.

 Carrie Rau is a Toronto-based food and wine professional. She is a graduate of the Stratford Chef’s School 04’ culinary program and red seal certified freelance chef. Carrie moved to Toronto in 2010 after working in some notable kitchens in her hometown of Stratford, ON and joined the ever-evolving hospitality scene where she discovered the wine community and fell in love! She has 17 years of professional cooking experience in restaurants, culinary teaching, culinary management and freelance work in research and recipe development.  Combined with wine training at the Court of Master Sommeliers and a candidate in the WSET Diploma program at IWEG her experience has gained her a passionate footing in both worlds.
